Better-than-Homemade Beef Stew


Ingredients

2 lb. beef, cut into 1 inch cubes
1/3 c all-purpose flour
1/2 tsp salt
1/2 tsp ground black pepper
2 cloves garlic, minced
1 bay leaf
1 tsp paprika
1 tbsp worcestershire sauce
1/2 c red wine
1 1/2 c beef broth
1 onion, medium chopped
3 potatoes, cubed
4 carrots, sliced

In a small bowl mix together the flour, paprika, salt and pepper; put meat cubes into gallon-size zip bag and shake beef in bag to coat.

Heat 1-2 tablespoons olive oil in a large skillet and saute coated beef in oil to sear, until just brown all over the outside (still bloody is OK). Then put the meat into the slow cooker.

In a small bowl, mix the beef broth with the worcestershire, and add the red wine. Pour into hot skillet to deglaze, then pour over beef in cooker.

Add the chopped onion, potatoes, carrots and garlic to slow cooker; cover and cook on low 10 - 12 hours, or on high 4 - 6 hours.

Laurie's Comments: This is a great meal to prepare in the morning. You can go about your day and still serve your family a tasty, nutritious meal at the end of the day! I have made this without the wine, just substitute with equal amount of water or beef broth. Also you can add other veggies...try peas, corn or green beans!
