Money Saving Tip of the Day
Cook At Home: If you both work (like Paul and I) this could be difficult. Our routine is as follows: His days off are Saturday and Sunday, mine are Wednesday and Thursday. He cooks on his days off and I cook on my days off. That leaves us with Monday, Tuesday, and Friday. On my days off I usually "double cook" meals. That means I cook double recipes of the meals that I am making. We freeze half of the food for one of the other days (that way all we have to do is reheat the one meal!). We usually have those on Monday and Tuesdays. We splurge by eating out on Friday's. We have found that we save on average $50 to $100 a week this way.
Green Tip of the Day
Recycle: Starting a recycling program in your home is really easy. The thing to do is to make it accessible. If you start a recycling program purchase a few plastic bins with lids. Then fill them up and take them to a recycling center near you once a week. If you do not know where your nearest recycling center is just go to http://www.earth911.com and plug in your zip code. They will give you all the information you need for your local area recycling.

Paul and Laurie's Home on the Web
I started this site originally when I was pregnant with my son William. I worked on it throughout my pregnancy as I was on bed-rest for 7 months. When my son was born, I worked on it when I could. Then my son died of S.I.D.S. Once again I picked up working on the site. It was the only outlet I had for my grief. I was able to move on again thanks to my many on-line friends who reminded me that I still had a life to live and other children to take care of. Over the years this site has had many names and many homes. It has taken on many new looks as well! I have recently come to realize that this website is my second home (most people just go to Florida or Texas!). My friends and family come here, see how I am doing, how the kids are growing, and I in return can see where they are at in their lives.
Paul and I thank you for taking the time to come visit us in our home. We truly do hope you enjoy your stay while you are here!

Easy Taco Salad
- A taco salad is an interesting twist to a healthy salad. You won't find anyone at the table moaning about having fresh vegetable here. It's wonderfully tasty. This is really easy and quick to make.
- Just take your choice of tortillas, and fry them in a shallow pan (I use a small amount of olive oil) until they are crispy. Lay them on paper towels to absorb any excess oil. I use the large flour tortillas cut into fours.
- Depending on our moods we use ground turkey, ground beef, or ground chicken (and sometimes a combination of the three!). We just add everything in layers. We layer ours like this:
- Tortillas
- Meat
- Refried Beans
- Lettuce or spinach (or both)
- Tomatoes (we use fresh from the garden when we have them)
- Avocado
- Green chilies
- Black olives
- Grated cheese
- Sauce
- Sour Cream
- Anything else that seems to strike our fancy at the time!
- After the layers are on, they are ready to serve!
